1 cup grated white cheddar or sharp provolone cheese
1 can green chilies, diced
1/2 cup red onion, diced
1/2 cup red bell pepper, diced
2 tablespoons fresh cilantro, chopped
4 tablespoons olive oil

Directions:
In saute pan, heat 2 tablespoons oil on high. Add onion and pepper, season with salt and pepper and cook until slightly soft. Remove I to plate to cool. Toss in cilantro and green chilies.
Get your grill on high heat, have all your ingredients ready and close to grill.
Brush both sides of tortilla with remaining oil, place on grill. Turn after 1 minute, and place ingredients on one half, veggies and cheese. Fold over quickly and press to hold.
Flip quesadilla over and cover grill for a minute until cheese is melted and is nice and crispy. Serve immediately with Pico de Gallo!
