Grilled Veggie Quesadillas





Serves 4
Ingredients:
| 1 12-inch flour tortilla |
| 1/2 cup grated Spanish Manchego cheese |
| 1 cup grated white cheddar or sharp provolone cheese |
| 1 can green chilies, diced |
| 1/2 cup red onion, diced |
| 1/2 cup red bell pepper, diced |
| 2 tablespoons fresh cilantro, chopped |
| 4 tablespoons olive oil |
| Salt, to taste |
| Pepper, to taste |
Directions:
- In saute pan, heat 2 tablespoons oil on high. Add onion and pepper, season with salt and pepper and cook until slightly soft. Remove I to plate to cool. Toss in cilantro and green chilies.
- Get your grill on high heat, have all your ingredients ready and close to grill.
- Brush both sides of tortilla with remaining oil, place on grill. Turn after 1 minute, and place ingredients on one half, veggies and cheese. Fold over quickly and press to hold.
- Flip quesadilla over and cover grill for a minute until cheese is melted and is nice and crispy. Serve immediately with Pico de Gallo!
