Smoked Gouda & Mushroom Quesadillas





Serves 4
Ingredients:
| 2 large whole wheat tortillas |
| 1 cup Alouette Pepper Parmesan Spread |
| 2 cups shredded smoked gouda |
| 8 oz sliced mushrooms |
| 2 tablespoons olive oil |
| Salt, to taste |
| 2 green onions, chopped |
| Pepper, to taste |
Directions:
- Heat olive oil in sauté pan. Add mushrooms, salt and pepper and cook until soft, about 5 minutes. Remove and set aside.
- To assemble the quesadillas, spread 1/2 cup Alouette on half of one tortilla, sprinkle on 1 cup gouda, then half the mushrooms on top and 1 chopped green onion. Fold other half of tortilla over and press down.
- Place griddle pan on medium high heat with 1 tablespoon oil. Brown one side of the quesadilla, flip over and brown the other side until cheese melts. Serve immediately!
