Smoked Gouda & Mushroom Quesadillas

Ingredients:
2 large whole wheat tortillas
1 cup Alouette Pepper Parmesan Spread
2 cups shredded smoked gouda
8 oz sliced mushrooms
2 tablespoons olive oil
Salt, to taste
2 green onions, chopped
Pepper, to taste
Directions:
Heat olive oil in sauté pan. Add mushrooms, salt and pepper and cook until soft, about 5 minutes. Remove and set aside.
To assemble the quesadillas, spread 1/2 cup Alouette on half of one tortilla, sprinkle on 1 cup gouda, then half the mushrooms on top and 1 chopped green onion. Fold other half of tortilla over and press down.
Place griddle pan on medium high heat with 1 tablespoon oil. Brown one side of the quesadilla, flip over and brown the other side until cheese melts. Serve immediately!
