Thai BBQ Meatballs





Serves 6-8.
Ingredients:
| 4 lb ground beef, pork or turkey |
| 2 cups rice crackers, crushed |
| 4 cloves garlic, minced |
| 1/3 cup fresh ginger, grated |
| 1 bunch fresh cilantro, chopped |
| 1 bunch scallions, chopped |
| 4 eggs |
| Salt, to taste |
| Pepper, to taste |
- Combine all and mix well. Form into desired size meatballs and bake at 375' about 25 minutes. Remove, cool & refrigerate until ready to serve.
| 2 tablespoons olive oil |
| 2 cloves garlic, minced |
| 1/2 cup Hoisin sauce |
| 1/3 cup brown sugar |
| 1 cup ketchup |
| 1/2 cup orange marmelade |
| 1 cup rice wine vinegar |
| 1/4 cup Asian chili sauce |
- In saucepan heat oil on high, add garlic and saute 2 minutes. Add remaining ingredients, bring to boil, and simmer 15 minutes. If ready to serve, add all meatballs and heat through. Toss to coat.
