Sun-dried Tomato Chicken & Scallion Fettuccine

Ingredients:
1 package fettucine egg pasta, (8 oz.)
4 tablespoons olive oil, plus 2 tablespoons for pasta
2 boneless skinless chicken breasts, cut in chunks
1 package sun-dried tomatoes, julienne cut, (3 oz.)rehydrated in hot water
1/4 cup water, for tomatoes
2 cloves garlic, minced
1 1/2 cups heavy cream
3 green onions, chopped
2 tablespoons unsalted butter
Salt, to taste
Pepper, to taste
Directions:
Boil pasta according to package instructions. After draining water, drizzle with 2 Tbsp. olive oil and toss to coat, set aside.
In large skillet add 4 Tbsp. oil on medium high heat. Add chicken, garlic, salt & pepper. Cook chicken until lightly brown on all sides. Add tomato water & cook 1 minute. Then add cream and tomatoes and reduce by 1/3.
Turn off heat, add pasta, butter, scallion, salt & pepper. Toss well and serve!
