Southwest Veggie Pizza

Serves 6


Ingredients:

1 large Boboli pizza crust
2 tablespoons olive oil
1/2 onion, chopped
1 Poblano pepper, chopped
1 cup Guacamole Salsa or Tomatillo Salsa
3/4 cup goat cheese
2 tablespoons ground cumin
1 1/2 cups shreddedAsadero cheese
Black pepper
1/4 cup chopped cilantro

Directions:

  1. Preheat oven to 375 degrees F. Place saute pan on high heat. Add olive oil, peppers, onions, salt & pepper. Cook 3 minutes, remove from heat and set aside.
  2. In small bowl place goat cheese & cumin, mix well. Place crust on a baking sheet, spread with salsa, then sprinkle peppers, onion, and asadero cheese. Then top with dollops of goat cheese. Bake for about 20 minutes or until golden brown. Remove and add cilantro & more ground black pepper. Serve immediately!
