Southwest Cheddar Hash Browns

Serves 4 - 6


Ingredients:

Hash Browns:
1 package Simply Potatoes Shredded Hash Browns, (20 oz.)
1 medium sweet yellow onion, finely diced
1 medium green bell pepper, finely diced
1/2 cup redbell pepper, finely diced
1/2 cup yellowbell pepper, finely diced
1/2 cup orange bell pepper, finely diced
6 drops chipotle or regular Tabasco sauce
2 tablespoons taco or southwest seasoning
2 cups finely shredded sharp cheddar cheese
Olive oil cooking spray
Salsa and sour cream, if desired
Fresh ground pepper, to taste
Sea salt, to taste
 

Directions:

  1. Toss all hash brown ingredients together in large bowl. Preheat large nonstick skillet on medium-high heat. Spray with olive oil cooking spray.
  2. Add half the bowl of seasoned hash browns to hot pan and spread evenly over bottom of pan. Brown the potatoes on each side until deep golden brown, about 5 to 7 minutes. Cheese will melt and form a crust; this is the only oil you will need!
  3. Season to taste, with sea salt and pepper. Transfer hash browns to platter; brown remaining hash browns in pan then toss both batches together and serve hot.
  4. Serve with salsa and sour cream on the side, if desired.
