Cocoa Spice Rub and Pomegranate Sauce





Serves 4
Ingredients:
| 1 pork tenderloin, cut in half |
| 1/4 cup cocoa powder |
| 1 tablespoon cayenne pepper |
| 1 teaspoon ground cumin |
| 2 tablespoons salt |
| 2 tablespoons olive oil, plus2 tablespoons for cooking |
| 1 teaspoon ground cinnamon |
- Mix all ingredients except oil together in small bowl. Place pork tenderloin in baking dish, rub with oil, then rub in the cocoa spice mixture.
- In skillet on high heat add oil. When hot, add pork and sear on all sides, about 2 minutes. Place in 375 degree F oven for 15 minutes. Remove, let sit 10 minutes, then cut to serve.
| 16 oz pomegranate juice |
| 2 tablespoons unsalted butter |
| 1/4 cup chives, chopped |
- Pour into saucepan, bring to boil and reduce by half. Whisk in butter, turn off heat, add chives and salt to taste.
