Vincent Cheese Salad





Serves 4
Ingredients:
| 2 medium carrots, or 5-6 radishes |
| 5 oz Vincent cheese |
| 2 pineapple rings |
| 2 tablespoons fresh ginger |
| 2 tablespoons mayonnaise |
| 2 tablespoons plain yogurt |
| 1/8 teaspoon salt |
| Lemon juice, to taste |
Directions:
- Wash the carrots or radishes and cut them into thin slices.
- Cut the Vincent cheese into cubes. Cut the pineapple and ginger into pieces and mix all of the ingredients in a bowl.
- Blend together the mayonnaise, yogurt, salt and lemon juice and spread it over the cheese mixture.
