Vincent Cheese Salad

Serves 4


Ingredients:

2 medium carrots, or 5-6 radishes
5 oz Vincent cheese
2 pineapple rings
2 tablespoons fresh ginger
2 tablespoons mayonnaise
2 tablespoons plain yogurt
1/8 teaspoon salt
Lemon juice, to taste

Directions:

  1. Wash the carrots or radishes and cut them into thin slices.
  2. Cut the Vincent cheese into cubes. Cut the pineapple and ginger into pieces and mix all of the ingredients in a bowl.
  3. Blend together the mayonnaise, yogurt, salt and lemon juice and spread it over the cheese mixture.
