Pesto Halibut Kabobs

Serves 4


Ingredients:

1 1/2 lb fresh halibut, cut into 1-inch chunks
1 large red bell pepper, cut into 1-inch chunks
3 tablespoons prepared basil pesto
2 tablespoons champagne vinegar
1/2 teaspoon salt
Cooking spray

Directions:

  1. Set grill on high heat.
  2. Place fish and pepper in bowl with pesto and vinegar, mix well and let stand 5 minutes. Skewer fish and peppers alternately and sprinkle each with salt.
  3. Spray skewers evenly on all sides with cooking spray and place on grill. Grill for 4 minutes on each side, turning only once. Serve immediately!
