Autumn Wild Rice Stuffing





Serves 4
Ingredients:
| 2 tablespoons butter |
| 1 small yellow onion, chopped |
| 1 clove garlic, minced |
| 1 seasonal Minnesota apple, peeled & chopped |
| 1/3 cup dried cranberries |
| 1 cup cooked wild rice |
| 1 2/3 cup hot chicken stock |
| 1 box Stove Top Stuffing for Pork, 6 oz. |
| 1 egg |
Directions:
- Bring chicken stock to boil, pour over stuffing and cranberries in mixing bowl and set aside until moistened.
- Heat butter in wide skillet on medium heat. Add garlic, onion and apples and sauté until soft, then set aside to cool.
- Mix egg into stuffing mix, then add apple mixture and wild rice. Mix with hands until well combined. Place in a greased baking dish and bake at 350 degrees F for 30-35 minutes. Sprinkle top with toasted pecans if you like!
