Cornbread Cheddar Stuffing





Serves 4
Ingredients:
+ Add All Ingredients to Shopping List
1 package Brownberry Cornbread Stuffing Mix+ Add to Shopping List |
1 1/4 cup chicken stock+ Add to Shopping List |
1 tablespoon butter+ Add to Shopping List |
1 tablespoon olive oil+ Add to Shopping List |
3/4 cup chopped red onion+ Add to Shopping List |
1 clove garlic, minced+ Add to Shopping List |
1/2 cup corn+ Add to Shopping List |
2 tablespoons whole grain mustard+ Add to Shopping List |
1 egg+ Add to Shopping List |
1 cup shreddedcheddar cheese+ Add to Shopping List |
Directions:
- Place stuffing mix in large bowl. Bring stock to a boil, pour over mix and let sit 5 minutes.
- In sauté pan heat butter and oil on medium high heat. Add onion, garlic and sauté 2 minutes. Add to stuffing along with the egg, mustard and corn. Chill 15 minutes, then add in cheese. Place in greased baking dish and bake covered 20 minutes. Uncover and bake another 10 minutes. Serve!
