Place stuffing mix in large bowl. Bring stock to a boil, pour over mix and let sit 5 minutes.
In sauté pan heat butter and oil on medium high heat. Add onion, garlic and sauté 2 minutes. Add to stuffing along with the egg, mustard and corn. Chill 15 minutes, then add in cheese. Place in greased baking dish and bake covered 20 minutes. Uncover and bake another 10 minutes. Serve!
