Caribbean Spiced Black Beans and Rice

Ingredients:
2 tablespoons olive oil or butter
1 medium red bell pepper, chopped
1 medium sweet onion, chopped
2 3/4 cups water or stock
3 green onions, chopped
Caribbean Jerk Spice Seasoning, to taste
Directions:
Preheat 2 quart saucepan over medium-high heat. Add olive oil or butter and chopped peppers and onions. Sauté until translucent, about 5 minutes.
Stir in Black beans and rice mix. Add water or stock and stir well, cover; bring to a boil. Reduce heat to medium-low and simmer, covered, for 25 minutes.
Remove from heat and lest rest, covered, for 5 minutes. Stir in green onions and season, to taste, with Caribbean jerk spice.
