Grilled Southwestern Vegetables





Serves 6
Ingredients:
| 1 poblano pepper, cut into large chunks |
| 1 red onion, cut into large chunks |
| 1 chayote squash, sliced thick |
| 1 red bell pepper, cut into large chunks |
| 1 cup fresh lime juice |
| 4 cloves garlic, chopped |
| 1 tablespoon ground cumin |
| 1 tablespoon Urban Accents-Mesa Rosa Chipotle Seasoning |
| 1/2 cup olive oil |
| 2 tablespoons Salt |
Directions:
- Place lime juice, garlic, spices, salt and oil into a bowl and mix together. Add all vegetables and marinate for 1 hour or overnight if you wish.
- Place on a hot grill, turning over when skins start to char and cook an additional 3-5 minutes.
