Grilled Southwestern Vegetables

Serves 6


Ingredients:

1 poblano pepper, cut into large chunks
1 red onion, cut into large chunks
1 chayote squash, sliced thick
1 red bell pepper, cut into large chunks
1 cup fresh lime juice
4 cloves garlic, chopped
1 tablespoon ground cumin
1 tablespoon Urban Accents-Mesa Rosa Chipotle Seasoning
1/2 cup olive oil
2 tablespoons Salt

Directions:

  1. Place lime juice, garlic, spices, salt and oil into a bowl and mix together. Add all vegetables and marinate for 1 hour or overnight if you wish.
  2. Place on a hot grill, turning over when skins start to char and cook an additional 3-5 minutes.
