Southwestern T-Bone with Chipotle Steak Butter

Ingredients:
4 T-bone steaks
Olive oil
Southwest seasoning or rub
Sea salt, to taste
Freshly ground black pepper, to taste
Preheat grill or skillet to medium-high heat. Rub steaks all over with olive oil and sprinkle with rub, salt and pepper. Cook on each side for about 7 to 8 minutes for medium. Remove to a platter and cover with foil to keep warm and let rest for 5 minutes before serving.
Place two to three tablespoons of Chipotle Steak Butter on each warm steak.
Chipotle Steak Butter
1 cup butter, softened
1 large shallot, finely chopped
1 tablespoon fresh cilantro, finely chopped
4 tablespoons chopped chipotle peppers in adobo sauce
1 tablespoon fresh lime juice
1 teaspoon lime zest
1/4 teaspoon salt
Combine all ingredients and mix until evenly blended.
