Southwestern T-Bone with Chipotle Steak Butter





Serves 4
Ingredients:
| 4 T-bone steaks |
| Olive oil |
| Southwest seasoning or rub |
| Sea salt, to taste |
| Freshly ground black pepper, to taste |
- Preheat grill or skillet to medium-high heat. Rub steaks all over with olive oil and sprinkle with rub, salt and pepper. Cook on each side for about 7 to 8 minutes for medium. Remove to a platter and cover with foil to keep warm and let rest for 5 minutes before serving.
- Place two to three tablespoons of Chipotle Steak Butter on each warm steak.
| 1 cup butter, softened |
| 1 large shallot, finely chopped |
| 1 tablespoon fresh cilantro, finely chopped |
| 4 tablespoons chopped chipotle peppers in adobo sauce |
| 1 tablespoon fresh lime juice |
| 1 teaspoon lime zest |
| 1/4 teaspoon salt |
- Combine all ingredients and mix until evenly blended.
