Ingredients:
1 tablespoon Fig Spread
3 tablespoons lemon juice
1 teaspoon Shallot, finely diced
1/4 cup extra virgin olive oil
1 container baby arugula, (about 5 oz.)
1 tablespoon Pumpkin seeds, toasted
1 tablespoon Sunflower seeds, toasted
2 oz Parmesan cheese, shaved or grated
Directions:
Prepare dressing: Combine fig spread, lemon juice, shallot, and olive oil in a small container with lid. Close lid and shake until dressing come together. Season to taste with sea salt and pepper.
Prepare salad: Combine arugula and strawberries in a large salad bowl and gently toss with dressing. Sprinkle pumpkin seeds, sunflower seed, and Parmesan over top.
