Zucchini Fritters*

Serves 4


Ingredients:

1 1/2 lb zucchini, grated
1 teaspoon salt
1/4 cup all-purpose flour
1/4 cup grated fresh Parmesan
1/2 cup scallions (green onions)
1 large egg, beaten
2 tablespoons olive oil
Garlic salt, to taste
Freshly ground black pepper, to taste

Directions:

  1. Place grated zucchini in a colander lined with paper towels over the sink. Add salt and gently toss to combine; let sit for 10 minutes.
  2. Gather paper towels in your hands and squeeze liquid from zucchini completely.
  3. In a large bowl, combine zucchini, flour, Parmesan, scallions and egg; season with salt and pepper, to taste.
  4. Heat olive oil in a large skillet over medium high heat. Scoop tablespoons of batter for each fritter, flattening with a spatula, and cook until the underside is nicely golden brown, about 3 minutes. Flip and cook on the other side, about 3 minutes longer.
  5. Serve immediately.
