Asparagus, Asiago Fresco Dop, and Pancetta Salad





Serves 1
Ingredients:
| 1/2 cup Asiago Fresco Dop, cut into 1/2 inch cubes |
| 1/4 cup Pancetta, cut into 1/2 inch strips |
| 1/2 cup Asparagus, cut into 1/2 inch pieces |
| 1/2 cup In-Season Green Salad |
| Extra Virgin Olive Oil |
| Salt |
| Fresh ground pepper |
Directions:
- Cook the Asparagus in salted water (2 Cups water, 1 1/2 teaspoon Salt, 1 teaspoon Sugar).
- Cook the Pancetta in a frying pan until crisp.
- Place the Asparagus, Asiago Fresco Dop, Pancetta and Salad Greens in a bowl.
- Mix adding Extra Virgin Olive Oil, Salt and Pepper. If preferred, add a few drops of balsamic vinegar.
