Honey Mustard Pistachio Salmon

Ingredients:
4 Salmon filets, (6oz.)
1/2 cup honey mustard salad dressing or dipping sauce (Ken's regular works well)
1 tablespoon brown sugar
4 Lemon wedges, for serving
1 cup shelled roasted pistachios, finely chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
Preheat oven to 375 degrees F. Place fillets, skin side down, on a greased baking sheet.
In a small bowl, combine the honey mustard, brown sugar, and salt and pepper; spoon over salmon. Sprinkle tops of filets evenly with chopped pistachios.
Bake 15 to 20 minutes or until nuts are nicely browned and salmon is just cooked through to an internal temperature of 145 degrees F. when meat thermometer is inserted into the thickest part of the salmon. Allow to rest, covered, for 5 minutes before serving.
Serve hot with lemon wedges on the side, if desired.
