Honey Mustard Pistachio Salmon





Serves 4
Ingredients:

4 Salmon filets, (6oz.)+ Add to Shopping List |
1/2 cup honey mustard salad dressing or dipping sauce (Ken's regular works well)+ Add to Shopping List |
1 tablespoon brown sugar+ Add to Shopping List |
4 Lemon wedges, for serving+ Add to Shopping List |
1 cup shelled roasted pistachios, finely chopped+ Add to Shopping List |
1/4 teaspoon salt+ Add to Shopping List |
1/4 teaspoon freshly ground black pepper+ Add to Shopping List |
Directions:
- Preheat oven to 375 degrees F. Place fillets, skin side down, on a greased baking sheet.
- In a small bowl, combine the honey mustard, brown sugar, and salt and pepper; spoon over salmon. Sprinkle tops of filets evenly with chopped pistachios.
- Bake 15 to 20 minutes or until nuts are nicely browned and salmon is just cooked through to an internal temperature of 145 degrees F. when meat thermometer is inserted into the thickest part of the salmon. Allow to rest, covered, for 5 minutes before serving.
- Serve hot with lemon wedges on the side, if desired.
