Pistachio Crusted Salmon

Serves 2


Ingredients:

1/2 lb salmon filet
1 cup pistachios, medium chopped
1 1/2 tablespoons fresh lemon juice
2 tablespoons olive oil
Salt, to taste
Pepper, to taste

Directions:

  1. Heat oven to 350 degrees F. Season salmon with salt & pepper, press cut side into pistachios.
  2. Heat olive oil in saute pan. When hot, place salmon nut side down into oil and cook on medium heat for about 2 minutes or until nuts are light brown in color. Turn salmon over and place whole pan in oven for another 8-10 minutes. Remove from oven and squeeze with fresh lemon juice. Serve immediately!
