1/3 cup cold mascarpone cheese, (can substitute with regular cream cheese)
1/3 cup cold heavy whipping cream, (Schroeder Heavy Whipping Cream)
3 tablespoons granulated white sugar, or to taste
1/2 teaspoon pure vanilla extract
Directions:
In a medium sized bowl, whip (with an electric hand mixer) the mascarpone cheese, heavy whipping cream, sugar, and vanilla extract until stiff peaks form.
Carefully wash strawberries and pat dry with paper towels. Remove the stems from the berries. Using a small paring knife, core the center of each berry being careful to leave the bottom in tact.
Spoon the cream into a pastry bag, pipe the cream into each strawberry. If not serving immediately, cover, and place in the refrigerator until you serve.
