Chipotle Sliders





Serves 12 slicers
Ingredients:
| 1 lb. lean ground beef |
| 1 package frozen Chorizo Mexican sausage, (14 oz)thawed |
| 1 cup chopped sweet yellow onion |
| 1 teaspoon Adobo seasoning |
| 2 tablespoons Chipotles in Adobo Sauce, minced |
| 12 slices Pepper Jack Cheese, for topping |
| 12 butter toasted slider buns, (Bakery Dollar or Hawaiian buns work well) |
| Chipotle or Southwestern flavored Mayonnaise, for serving |
| 12 slices semi-ripe Avocado, for serving |
| 12 slices Roma tomato, for serving |
Directions:
- In a large bowl, mix together the ground beef, Chorizo, chopped onion, Adobo seasoning and minced Chipotles in Adobo Sauce with gloved hands. Shape into 12 equal-sized patties.
- Preheat Grill to medium-high heat. Grill burgers until juices run clear, about 4 minutes per side or until internal temperature reaches 160 degrees F. Place Pepper Jack cheese slices on top of burgers the last minute of grilling time.
- To assemble burgers: spread both cut sides of buns with chipotle mayo then layer with cooked burger, avocado slices, tomato slices, and top buns.
