Mexican Pasta Salad with Chipotle Lime Dressing

Ingredients:
12 oz Bowtie Noodles, plain or colorful
1 can Roasted Corn, drained
1 can Black Beans, drained and rinsed
1 pint cherry tomatoes
1 green pepper, diced
1/2 red onion, diced
2 avocados, diced
1/3 cup cilantro. chopped
5 oz Queso Fresco, crumbled
Bring a pot of salted water to a boil. Cook pasta according to the box instructions. Remove from heat, drain, and allow to cool. Once cool, place in a large mixing bowl.
Add the corn, black beans, tomatoes, green pepper, red onion, and avocados. Mix together.
In a small bowl, combine ingredients to make the dressing. Pour over the noodles and toss everything together.
Add salt and pepper, to taste.
Add cheese and cilantro. Toss again.
Top with additional cheese and serve.
Chipotle Lime Dressing
1/2 cup mayonnaise
3 Tablespoon Lime Juice
1/8 teaspoon cumin
1/4 teaspoon paprika
1/2 teaspoon chili powder
1 teaspoon chipotle hot sauce (substitute any hot sauce if needed)
salt and pepper to taste.
In a small bowl, combine ingredients to make the dressing.
