Mexican Pasta Salad with Chipotle Lime Dressing





Ingredients:

12 oz Bowtie Noodles, plain or colorful+ Add to Shopping List |
1 can Roasted Corn, drained+ Add to Shopping List |
1 can Black Beans, drained and rinsed+ Add to Shopping List |
1 pint cherry tomatoes+ Add to Shopping List |
1 green pepper, diced+ Add to Shopping List |
1/2 red onion, diced+ Add to Shopping List |
2 avocados, diced+ Add to Shopping List |
1/3 cup cilantro. chopped+ Add to Shopping List |
5 oz Queso Fresco, crumbled+ Add to Shopping List |
- Bring a pot of salted water to a boil. Cook pasta according to the box instructions. Remove from heat, drain, and allow to cool. Once cool, place in a large mixing bowl.
- Add the corn, black beans, tomatoes, green pepper, red onion, and avocados. Mix together.
- In a small bowl, combine ingredients to make the dressing. Pour over the noodles and toss everything together.
- Add salt and pepper, to taste.
- Add cheese and cilantro. Toss again.
- Top with additional cheese and serve.

- In a small bowl, combine ingredients to make the dressing.
