Directions:
This recipe can be made a day or two ahead. Pat pork roast dry with paper towels; rub all over with vegetable oil. Sprinkle evenly with pork rub and Adobo seasoning.
Preheat large skillet over high heat and add a half-inch of vegetable oil to pan. When oil is hot, carefully add roast to oil and brown on all sides.
Transfer to slow cooker and add chopped onion and beer. Cover and cook 4 to 6 hours on high or 8 to 10 hours on low.
Remove and discard fat and bones; shred meat. Stir shredded pork back into juices in slow cooker. Add more Adobo seasoning, to taste. Use in Cuban Sandwiches or Mexican dishes.
