1 tablespoon spicy brown mustard, plus more for topping
1 cup shredded Swiss or Jarlsberg Cheese
4 Ciabatta Rolls, split
2 cups shredded or sliced roast pork, (see separate carnitas recipe)divided
Olive oil, for toasting
8 slices smoked ham, divided
16 dill pickles, sliced anddivided
Directions:
In a medium bowl, mix together the mayo and spicy mustard; stir in shredded Swiss or Jarlsberg cheese. Spread each cut side of split ciabatta rolls with a light layer of the cheese mixture. Layer sandwiches evenly with ham, shredded pork carnitas, dill pickle slices, and more mustard, if desired. Close with top bun.
Preheat large skillet over medium-high heat and add enough olive oil to cover bottom of pan. Place all 4 sandwiches in pan and set another pan just a little bit smaller over the top to press sandwiches together as they toast.
Toast about 4 to 5 minutes per side or until browned and crunchy. Serve hot.
