Carnitas (Roast Pork)





Serves 8
Ingredients:
| 2 lb Pork shoulder roast |
| Vegetable oil |
| Pork Rub |
| Adobo Seasoning |
| 1 large sweet yellow onion, chopped |
| 1 beer or non alcoholic beer, (12 oz)bottle or can |
Directions:
- This recipe can be made a day or two ahead. Pat pork roast dry with paper towels; rub all over with vegetable oil. Sprinkle evenly with pork rub and Adobo seasoning.
- Preheat large skillet over high heat and add a half-inch of vegetable oil to pan. When oil is hot, carefully add roast to oil and brown on all sides.
- Transfer to slow cooker and add chopped onion and beer. Cover and cook 4 to 6 hours on high or 8 to 10 hours on low.
- Remove and discard fat and bones; shred meat. Stir shredded pork back into juices in slow cooker. Add more Adobo seasoning, to taste. Use in Cuban Sandwiches or Mexican dishes.
