Fiesta Corn Dip





Serves 5 cups
Ingredients:
| 1 can Southwest style corn, (11 oz.)drained |
| 1 can Mexi-corn with sweet peppers, (11 oz.)drained |
| 1 can Chipotle white corn, (11 oz.)drained |
| 1 can diced mild roasted green chilies, (4 oz.) |
| 1 cup light mayonnaise |
| 1 cup light sour cream |
| 2 cups finely shredded sharp Cheddar or Mexican blend taco cheese |
| Sea salt, to taste |
| Freshly ground pepper, to taste |
| 3 green onions, (scallions), finely chopped |
| 1/2 can finely diced jalapenos |
Directions:
- Combine all ingredients in large bowl. Season, to taste, with sea salt and freshly ground pepper. Cover. Chill 4 hours to overnight to allow flavors to develop. Serve with scoop corn chips or tortilla chips.
- (Note: Covered and refrigerated, dip will keep for 4 to 5 days.) Stir before serving.
