4 cups cooked chicken, diced, (rotisserie works well)
1 package chicken taco seasoning
1/4 cup water, or more, as needed to moisten
12 flour tortillas, (taco or fajita size)
Vegetable oil, for frying
Adobo seasoning
2 Cups shredded Mexican blend cheese
Prepared guacamole
Salsa Verde, (green salsa)
Sour cream
Directions:
Preheat large skillet over medium-high heat; add butter, onions, and garlic. Sauté until translucent, about 5 minutes.
Stir in chicken and sprinkle with chicken taco seasoning. Add water; stir well to coat and moisten chicken, adding more water as needed. Remove from heat and set aside; keep warm.
Meanwhile, fill a 10-inch skillet with a half-inch of vegetable oil and heat to 350 degrees F. Fry all 12 tortillas, one at a time, about 30 seconds per side, until slightly puffy.
Drain on paper towels, sprinkle one side with Adobo seasoning, and fold in half while still warm.
Fill puffy taco shells with evenly with guacamole, chicken mixture, shredded cheese, salsa, and sour cream. Serve two tacos per person.
