Apple-Walnut Oatmeal Cookies

Ingredients:

3/4 cup unsalted butter, softened
1 cup packed dark brown sugar
1/2 cup granulated white sugar
1 egg
1/2 cup cinnamon applesauce
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
2 teaspons ground cinnamon
1 teaspon baking soda
1 teaspon salt
3 cups old-fashioned or quick oats
1 Haralson apple, peeled, cored, and diced
1 cup chopped walnuts
1 cup golden raisins, optional

Directions:

  1. Preheat oven to 375 degrees F.
  2. In medium bowl, whisk together flour, oats, cinnamon, salt and baking soda; set aside.
  3. Using hand or stand mixer on high speed, cream butter, brown sugar and white sugar together until light and fluffy, about 5 minutes. Add egg and vanilla and mix on medium speed until well incorporated, about 2 minutes more.
  4. Add applesauce and mix another minute. Add flour/oat mixture in gradually and mix on low speed until incorporated. Stir in diced apple, chopped walnuts, and raisins, if using.
  5. Drop rounded tablespoons of dough on parchment paper-lined cookie sheets. Bake for 13 minutes.
