Apple-Walnut Oatmeal Cookies





Serves 30
Ingredients:
| 3/4 cup unsalted butter, softened |
| 1 cup packed dark brown sugar |
| 1/2 cup granulated white sugar |
| 1 egg |
| 1/2 cup cinnamon applesauce |
| 2 teaspoons pure vanilla extract |
| 1 1/2 cups all-purpose flour |
| 2 teaspons ground cinnamon |
| 1 teaspon baking soda |
| 1 teaspon salt |
| 3 cups old-fashioned or quick oats |
| 1 Haralson apple, peeled, cored, and diced |
| 1 cup chopped walnuts |
| 1 cup golden raisins, optional |
Directions:
- Preheat oven to 375 degrees F.
- In medium bowl, whisk together flour, oats, cinnamon, salt and baking soda; set aside.
- Using hand or stand mixer on high speed, cream butter, brown sugar and white sugar together until light and fluffy, about 5 minutes. Add egg and vanilla and mix on medium speed until well incorporated, about 2 minutes more.
- Add applesauce and mix another minute. Add flour/oat mixture in gradually and mix on low speed until incorporated. Stir in diced apple, chopped walnuts, and raisins, if using.
- Drop rounded tablespoons of dough on parchment paper-lined cookie sheets. Bake for 13 minutes.
