1 package shredded Deli style 3-Color Coleslaw mix
1 medium jícama (about 1 lb.), peeled and cut into 1-inch matchstick size strips
1 medium red bell pepper, cut into matchstick size strips
1 cup diced fresh or canned pineapple, drained
4 scallions(white and green parts), thinly sliced
1/4 cup chopped fresh cilantro
1/2 cup mayonnaise
1/2 teaspoon ground cumin
Zest and juice of 1 medium lime
1 jalapeño,seeded and finely diced, optional
to taste Salt and Pepper
Directions:
In a large bowl, toss together the coleslaw mix, jicama, red bell pepper, pineapple, and scallions.In a separate small bowl, whisk together the cilantro, mayo, cumin, lime juice,and jalapeno, if using. Season, to taste, with salt and pepper.
Refrigerate until ready to use and stir well before serving. Great light summer side or use infish or chicken tacos.
