Cilantro Lime Farro

Ingredients:

1 Cup Uncooked Whole Farro
3 Cups Water
1/3 Cup Cilantro, chopped
Zest and Juice of 1 Lime
1/2 Tsp Salt
1/4 Tsp Black Pepper
1/4 Tsp Garlic Powder
1/4 Tsp Cumin, optional

Directions:

  1. Start by preparing the farro. Add the water and farro to a pot. Bring to a boil. Reduce the heat and simmer, partially covered, for 20-25 or until the farro is tender. Drain the farro but do not rinse. Return to the pot.
  2. Add the cilantro, lime zest, lime juice, salt, pepper, garlic powder, and cumin. Stir to combine. Taste and add additional seasoning, if necessary.
  3. Serve immediately while still warm.
