Salmon Kabobs with Rainbow Veggies

Ingredients:

+ Add All Ingredients to Shopping List
1 lbs Salmon Filet+ Add to Shopping List
1 Each Red, Green, and Yellow Bell Pepper+ Add to Shopping List
1/4 Large Red Onion+ Add to Shopping List
Olive Oil+ Add to Shopping List
Salt and Pepper+ Add to Shopping List
Lemon+ Add to Shopping List
Wood Skewers+ Add to Shopping List

Directions:

  1. Cut salmon and veggies into 1 inch pieces. You need about 4-5 pieces of each per skewer.
  2. Thread each skewer by alternating each item; red pepper, green pepper, yellow pepper, onion, and salmon. Repeat until each skewer is full.
  3. Brush skewers with olive oil and sprinkle with salt and pepper, on each side.
  4. Cook on a hot grill, rotating to cook on each side, until the fish is cooked through and the veggies are softened.
  5. Squeeze fresh lemon over the top and serve.
