Ingredients:
Olive Oil
1/2 Large White Onion, sliced into strips
1 lb Boneless Skinless Chicken Breasts, cut into strips
Salt and Pepper
2 Cloves Garlic, minced
3/4 Cups Fresh Apple Cider
2 Tbsp Dijon Mustard
2 Tbsp Butter
2 Honeycrisp Apples, cut into wedges
3 Tbsp Brown Sugar
1 Tsp Cinnamon
1 Tsp Lemon Juice
Fresh Sage, chopped, for topping
Directions:
Heat a large skillet over medium-high heat. Add the olive oil and onions and cook until the onions are soft and translucent.
Add the chicken, season with salt and pepper, and cook until the chicken is 80% done. Stir frequently so all sides heat evenly.
Add the garlic and cook for another minute.
In a small bowl, combine the apple cider and Dijon mustard. Add to the skillet, turn the heat to low, cover, and simmer for about 10 minutes. The chicken will finish cooking at this time.
In a separate skillet, melt the butter over medium-high heat.
Add the apples, brown sugar, cinnamon, and lemon juice. Stir to combine and cook until the apples are tender.
Place a portion of the chicken and a portion of the apples on each plate. Top with chopped sage and serve.
