Mashed Potato & Stuffing Cakes

Ingredients:

1 egg, lightly beaten
1 Tablespoon green onion, finely chopped
1/8 teaspoon pepper
1 cup leftover mashed potatoes
1 cup leftover stuffing
1 cup leftover turkey, chopped
1 Tablespoon butter
1 Tablespoon Olive Oil

Directions:

  1. Whisk together the egg, onions, and pepper.
  2. Add the potatoes, stuffing, and turkey, mix well. (If the mixture is soft and mushy, place in the fridge for about 30 minutes.)
  3. Melt the butter with the oil in a skillet over medium heat.
  4. Using an ice cream scoop, spoon the mixture into the pan, about 2 at a time. Use a spatula to slightly flatten the mixture into a round cake.
  5. Fry on each side for 3-4 minutes or until golden brown. Transfer to a parchment paper lined pan.
  6. Repeat until all the mixture has been cooked.
  7. Serve warm, seasoned with salt.
