Buffalo Cauliflower Tacos

Ingredients:

1 Head of Cauliflower, cut into bite sized pieces
2 Tbsp Olive Oil
2 Tsp Garlic Powder
2 Tsp Chili Powder
1 1/2 Cups Buffalo Sauce, separated
Pepper, to taste
8 Taco Tortillas
Shredded Lettuce
2 Avocados, pitted and sliced
Ranch Dressing, to drizzle on top
Green Onion, chopped, optional
Jalapeno, chopped, optional

Directions:

  1. Preheat oven to 425 degrees. Line a baking sheet with foil.
  2. In a large bowl combine the cauliflower, olive oil, garlic powder, chili powder, and ½ Cup of the buffalo sauce. Stir to combine and spread evenly on the baking sheet.
  3. Bake for 10 minutes, stir to combine, bake for another 10 minutes.
  4. Heat the remaining buffalo sauce in the microwave. Place the cauliflower back into the bowl and add the extra buffalo sauce. Toss to combine.
  5. Assemble the tacos with lettuce, avocado, green onion, and cauliflower. Drizzle with a small amount of ranch.
