Ingredients:
| 1 Head of Cauliflower, cut into bite sized pieces |
| 2 Tbsp Olive Oil |
| 2 Tsp Garlic Powder |
| 2 Tsp Chili Powder |
| 1 1/2 Cups Buffalo Sauce, separated |
| Pepper, to taste |
| 8 Taco Tortillas |
| Shredded Lettuce |
| 2 Avocados, pitted and sliced |
| Ranch Dressing, to drizzle on top |
| Green Onion, chopped, optional |
| Jalapeno, chopped, optional |
Directions:
- Preheat oven to 425 degrees. Line a baking sheet with foil.
- In a large bowl combine the cauliflower, olive oil, garlic powder, chili powder, and ½ Cup of the buffalo sauce. Stir to combine and spread evenly on the baking sheet.
- Bake for 10 minutes, stir to combine, bake for another 10 minutes.
- Heat the remaining buffalo sauce in the microwave. Place the cauliflower back into the bowl and add the extra buffalo sauce. Toss to combine.
- Assemble the tacos with lettuce, avocado, green onion, and cauliflower. Drizzle with a small amount of ranch.
