Ingredients:
+ Add All Ingredients to Shopping List
1 Cup Flour+ Add to Shopping List |
1 Tsp Baking Powder+ Add to Shopping List |
1/2 Tsp Baking Soda+ Add to Shopping List |
1 Tbsp Sugar+ Add to Shopping List |
1 Egg+ Add to Shopping List |
1 Cup Unsweetened Almond Milk, or any milk of choice+ Add to Shopping List |
1 Tbsp Butter, melted+ Add to Shopping List |
Blueberries, optional+ Add to Shopping List |
Mini Chocolate Chips, optional+ Add to Shopping List |
Maple Syrup, for topping, optional+ Add to Shopping List |
Directions:
- Preheat oven to 400 degrees. Spray a mini muffin pan (24 small wells) with cooking spray.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and sugar.
- In a separate bowl, beat the egg. Add the milk and melted butter. Whisk together.
- Pour the wet ingredients into the dry ingredients and stir to combine.
- Pour the batter into the muffin pan, filling each well about 2/3 full.
- Optional - add blueberries or mini chocolate chips on top. Or make a variety - some blueberry, some chocolate chip, some plain.
- Bake for 8-10 minutes. Use a rubber spatula to gently remove the muffins from the tin.
- Serve warm with maple syrup.
