Mini Pancake Muffins

Ingredients:
1 Cup Flour 1 Tsp Baking Powder 1/2 Tsp Baking Soda 1 Tbsp Sugar 1 Egg 1 Cup Unsweetened Almond Milk, or any milk of choice 1 Tbsp Butter, melted Blueberries, optional Mini Chocolate Chips, optional Maple Syrup, for topping, optional
Directions: Preheat oven to 400 degrees. Spray a mini muffin pan (24 small wells) with cooking spray. In a mixing bowl, whisk together the flour, baking powder, baking soda, and sugar. In a separate bowl, beat the egg. Add the milk and melted butter. Whisk together. Pour the wet ingredients into the dry ingredients and stir to combine. Pour the batter into the muffin pan, filling each well about 2/3 full. Optional - add blueberries or mini chocolate chips on top. Or make a variety - some blueberry, some chocolate chip, some plain. Bake for 8-10 minutes. Use a rubber spatula to gently remove the muffins from the tin. Serve warm with maple syrup.
