Ingredients:
| 1 lb Boneless Skinless Chicken Breasts, cut into thin strips |
| 1 Green Bell Pepper, thinly sliced |
| 1 Red Bell Pepper, thinly sliced |
| 1 Yellow Bell Pepper, thinly sliced |
| 1 White Onion, thinly sliced |
| 1/4 Tbsp Chili Powder |
| 1/4 Tbsp Chipotle Chili Powder |
| 1/2 Tsp Salt |
| 1/2 Tsp Cumin |
| 1/2 Tsp Oregano |
| 1/2 Tsp Garlic Powder |
| 1/2 Tsp Onion Powder |
| 1/2 Tsp Black Pepper |
| Tortilla Shells, optional, for serving |
| Shredded Cheese, optional, for serving |
Directions:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Slice the peppers, onion, and chicken. Set aside.
- In a small mixing bowl, combine the chili powder, chipotle chili powder, salt, cumin, oregano, onion powder, garlic powder, and black pepper. Set aside.
- Add the peppers and onion to the baking sheet.
- Place the chicken strips on top of the peppers and onion.
- Lightly spray the top with cooking spray. Sprinkle the seasoning mixture evenly over the top.
- Bake for 15 minutes, stir, then bake for an additional 15 minutes.
- Serve hot and eat as is or build a fajita with a tortilla shell and cheese. Enjoy!
