Ingredients:
| 2 Cups Flour |
| 1 1/2 Tsp Baking Powder |
| 1/2 Tsp Baking Soda |
| 1/2 Tsp Salt |
| 2 1/2 Tsp Ground Ginger |
| 1 1/2 Tsp Ground Cinnamon |
| 1/2 Tsp Ground Nutmeg |
| 1/2 Tsp Ground Cloves |
| 1 1/4 Cups Water |
| 1/2 Cup Molasses, unsulphured or regular molasses |
| 2 Large Eggs |
| 3 Tbsp Unsalted Butter, melted |
| Maple Syrup, for serving |
Directions:
- Preheat an electric griddle to 350 degrees F.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves. Make a well in the center of the mixture and set aside.
- In a separate bowl, whisk together the water, molasses, and eggs. Add the melted butter and whisk to combine.
- Pour the liquid ingredients into the dry ingredients, while whisking. Whisk until just combined. The batter will be a little runny. Let it sit for 2-3 minutes to thicken.
- Once the griddle is hot, add 1/3 cup scoops of the batter onto the griddle. Cook until the bottom is golden brown, and bubbles start to appear on the surface. Then flip and cook the other side until golden brown.
- Serve hot off the griddle with maple syrup.
