Chocolate Zucchini Bread

Ingredients:
1 Cup All Purpose Flour 1/2 Cup Unsweetened Cocoa Powder 1 Tsp Baking Soda 1/2 Tsp Sea Salt 2 Large Eggs 1/4 Cup Unsalted Butter, melted 1/4 Cup Vegetable Oil 3/4 Cup Light Brown Sugar, packed 1 Tsp Vanilla Extract 1 1/2 Cups Shredded Zucchini, packed 1 Cup Semi-Sweet Chocolate Chips, divided
Directions: Preheat the oven to 350 degrees F. Grease a 9x5 loaf pan and line with parchment paper. Whisk together the flour, cocoa powder, baking soda, and sea salt. Set aside. To the bowl of a stand mixer, add the eggs, melted butter, vegetable oil, vanilla, and brown sugar. Mix until smooth. Add the dry ingredients and mix until just incorporated. Add the zucchini and stir in by hand. Add ¾ cup of chocolate chips and stir in by hand. Pour the batter into the prepared loaf pan. Sprinkle the remaining ¼ cup of chocolate chips over the top (add more to your liking). Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and use the parchment paper to lift the bread out of the loaf pan. Place on a cooking rack to cool. Let the bread finish cooling, then enjoy immediately or cover and store on the counter.
