- Start by making the tzatziki sauce. Add all ingredients in a bowl and stir to combine. Taste and adjust the seasoning as needed. Cover and refrigerate until ready to serve.
- Make the cucumber tomato salad. Add all ingredients to a bowl and stir to combine. Taste and adjust the seasoning as needed. Cover and refrigerate until ready to serve.
- Cook the rice according to package instructions. When ready, add the lemon juice, dill, salt, and pepper. Stir to combine. Keep covered until ready to serve.
- While the rice is cooking, prepare the chicken. Heat oil in a large skillet over medium heat. Add the ground chicken and break apart while it starts to cook. Once the chicken is about ½ way done, add the red onions and stir to combine.
- Add the oregano, garlic powder, cumin, cinnamon, salt, and pepper. Stir to combine. Cook until the chicken is cooked through.
- Add the parsley, lemon zest, and lemon juice. Stir to combine Reduce the heat to low and let simmer for about 5 minutes to absorb the flavors. Remove from the heat.
- Assemble the bowls. Scoop rice into the bottom of the bowls. Top with the ground chicken mixture, cucumber tomato salad, and tzatziki sauce. Sprinkle crumbled feta cheese on top and enjoy.

| 1 Tsp Salt |
| 1/2 Tsp Black Pepper |
| 1 Tbsp Olive Oil |
| 1 1/2 lbs Ground Chicken |
| 1/2 Red Onion, diced |
| 2 Tbsp Flat Leaf Parsley, chopped |
| 2 Tsp Dried Oregano |
| 1/2 Tsp Garlic Powder |
| 1/2 Tsp Cumin |
| 1/4 Tsp Cinnamon |
| 1 Tsp Salt |
| 1/2 Tsp Black Pepper |
| Zest of one Lemon |
| 2 Tbsp Fresh Lemon Juice |
| 4 Cups Cooked Rice |
| 1 Tbsp Fresh Chopped Dill |
| 2 Tbsp Fresh Lemon Juice |
| 1 Tsp Salt |
| 1/2 Tsp Black Pepper |
| Crumbled Feta, for topping |
