Bacon Apple Chicken Burger with Dijon Sauce

Ingredients:
10 Slices Bacon
1/4 Red Onion, minced
3-4 Garlic Cloves, minced
1/2 Tsp Salt
1/2 Tsp Black Pepper
1/4 Cup Fresh Apple Cider
1/2 Granny Smith Apple, finely chopped, about 2/3 cup
2 Tbsp Flat Leaf Parsley, minced
1/2 Tsp Ground Sage
2 lbs Ground Chicken
1 Cup Panko Breadcrumbs
6 Hamburger Buns
1/2 Red Onion, thinly sliced, for topping
6 Slices Cheddar Cheese, for topping
Start by preparing the Dijon sauce (see ingredient list below). Add the Dijon mustard, maple syrup and mayonnaise to a bowl and stir to combine. Cover and place in the fridge until ready to use.
Cook the bacon according to package instructions. Drain and cool on a paper towel lined plate. Once cool, finely chop 4 strips of bacon and keep the other 6 intact to use as burger toppings.
In a separate skillet, add 1 Tbsp oil and heat over medium heat. Add the onion, garlic, salt, and pepper. Stir to combine and cook until the onions are translucent.
Slowly pour in the apple cider and stir to deglaze the pan. Add the chopped bacon, apple, parsley, and sage. Stir to combine and cook until the apple starts to soften, about 3-4 minutes.
Remove from the heat and let cool.
In a large bowl, combine the ground chicken, breadcrumbs, and apple mixture.
Line a baking sheet with wax paper or parchment paper. Shape the mixture into 6 patties and place on the baking sheet. Place the baking sheet in the freezer for 10 minutes to help the burgers firm up.
Heat a grill pan or skillet over medium heat. Grill the burgers on each side for 7-8 minutes or until cooked through (internal temp of 165 degrees F).
While the burgers finish cooking, preheat the oven to 350 degrees F. Place the hamburger buns, open faced, on the baking sheet. Place one slice of cheese on one half of each bun. Place in the oven for 2-3 minutes to toast the buns and melt the cheese.
Assemble the burgers. Place the burger patty on top of the cheese. Break a strip of bacon in half and set on top. Add sliced red onion. Spread the Dijon sauce on the top half of the bun and place on top. Enjoy!
