Ingredients:
| 1/4 Cup Red Wine Vinegar |
| 1/4 Cup Olive Oil |
| 2 Tbsp Ketchup |
| 2 Tbsp Honey |
| 1/2 Tsp Worcestershire Sauce |
| 1/2 Tsp Paprika |
| 1/4 Tsp Onion Powder |
| 1/4 Tsp Garlic Powder |
| 1 lb Ground Chicken (or Ground Beef) |
| 1 Packet Taco Seasoning |
| 16 oz Shredded Lettuce |
| 1 Green Bell Pepper, diced |
| 1 Cup Black Olives, sliced |
| 2 Roma Tomatoes, diced |
| 15 oz Can Corn, drained |
| 15 oz Can Black Beans, drained and rinsed |
| 1 Cup Shredded Cheese |
| 2 Cups Nacho Cheese Doritos, crushed |
Directions:
- Make the dressing. Add the red wine vinegar, olive oil, ketchup, honey, Worcestershire, paprika, onion powder, and garlic powder to a mason jar. Shake well. Refrigerate until ready to use. Can make up to 2 days in advance.
- Heat a large skillet over medium heat. Add the chicken and cook to completion. Add the taco seasoning and water (according to package instructions). Stir to combine. Bring to a boil then reduce the heat and simmer for about 5 minutes to let the chicken absorb the flavors. Remove from the heat and let cool for about 10 minutes.
- Divide the lettuce between 4-6 bowls. Top with green pepper, black olives, tomato, corn, black beans, and cheese to each bowl.
- Once cooled slightly, divide the chicken between the bowls. Top with crushed Doritos.
- Drizzle the dressing over the top of each bowl. Serve immediately.
- Add additional dressing, crushed Doritos, or other ingredients as needed, to taste. Enjoy!
