Lemon Dijon Asparagus

|1 lb. fresh asparagus, rinsed, tough ends snapped off, and cut into 1 1/2-inch pieces|
|2 tablespoons butter|
|2 tablespoons fresh lemon juice|
|1 tablespoon Dijon mustard|
|Sea salt, to taste|
|1/4 cup freshly shredded Parmesan cheese, for topping|
|Freshly ground pepper, to taste|
- Preheat large nonstick skillet over medium-high heat. Add asparagus to dry hot pan and stir quickly for about 3 to 5 minutes.
- Add butter, Dijon mustard, and lemon juice and stir well.
- Sauté another 3 to 5 minutes or until asparagus is just crisp-tender and remove from heat; season to taste with salt and pepper.
- Divide into 4 portions on serving plates and top each with a fourth of the shredded Parmesan.
