Cheesy Ham & Potato Soup

Serves 6


Ingredients:

3 medium diced potatoes, or l bag Simply Potatoes Diced Potatoes with Onion
2 cups chicken stock
1 sweet yellow onion, diced
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 1/2 cups half and half
2 cups shredded cheddar cheese
2 cups cooked diced ham
Salt, to taste
Freshly ground pepper, to taste

Directions:

  1. Bring chicken stock to a boil; add potatoes and cook until tender, and set aside.
  2. Melt butter in a medium saucepan over medium heat. Sauté chopped onion in the hot butter until tender. Add flour to butter and onion mixture; stir until smooth. Season with a little salt and pepper; continue to cook and stir for 1 minute. Gradually add potatoes and cooking liquid, and milk. Stir well; add cheese and ham.
  3. Simmer potato ham soup over low heat, stirring frequently, for about 20 minutes. Serve with crusty bread on the side.
