Cranberry, Fig & Walnut Compote

Serves 3 cups
|Topping for Brie or Triple Cream cheese|
|2 tablespoons olive oil|
|2 small shallots, chopped|
|1 cup dried figs, chopped|
|1 cup craisins|
|1 teaspoon orange zest|
|5 tablespoons fresh orange juice|
|1 cup sherry wine|
|1/3 cup maple syrup|
|1 teaspoon black pepper|
|1/2 cup toasted walnuts, chopped|
- Place oil in saucepan on medium high heat. Add shallots & caramelize, about 5 minutes. Then add sherry, craisins, figs, zest, orange juice, syrup and cook on medium heat until juices reduce by half, about 15 minutes. Add pepper and remove from heat. Cool at room temperature, then fold in nuts. Serve warm or at room temperature with cheese.
