New York Strip Steak topped with Blue Cheese Butter

Serves 6-8


6 New York or Kansas City Strip Steaks
Montreal Steak Seasoning
Olive Oil
  1. Preheat grill to medium-high heat. Rub both sides of steaks to cover with olive oil and sprinkle with Montreal Steak Seasoning. Grill on both sides until cooked to desired doneness, about 4 minutes on each side for medium rare. Top with Blue Cheese Butter rounds; let rest, covered, 5 minutes before serving.
For the Butter:
1 cup unsalted butter, room temperature
1/2 cup Blue Cheese
2 tablespoon fresh chives, finely minced
2 cloves fresh garlic, finely minced or pressed
Sea Salt, to taste
Freshly cracked pepper, to taste
  1. Mix all ingredients together in a medium bowl. Shape butter into a log shape on some plastic wrap and refrigerate until ready to use. Slice off 1/4-inch rounds and place on top of grilled steaks.
  2. Chef's note: Make Blue Cheese Butter a day ahead, allowing flavors to blend.
