Salmon Crostini with Aged Castello Havarti

|1 baguette or ciabatta loaf|
|7 oz cold smoked salmon|
|1 package Castello Aged Havarti|
|1 bunch arugala|
|1 bunch fresh parsley|
- Cut the day old bread into slices and toast. Drizzle with olive oil. Cut the smoked salmon and Castello Aged Havarti and place on the toasted slices of bread. Place the arugula and grapefruit slices on top and finish with fresh parsley. Serve.
